Ingredients:

  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Sponge Cake:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, beat eggs and sugar with an electric mixer until pale and fluffy, about 5-7 minutes.
  • In a separate bowl, sift together flour and baking powder. Gradually fold the flour mixture into the egg mixture, alternating with the milk and vanilla extract, until just combined.
  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from oven and let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • Slice the cooled sponge cake horizontally into three even layers.
  • Place one layer of cake on a serving plate or cake stand. Spread a thin layer of raspberry or strawberry jam over the cake layer.
  • Spread a thick layer of pastry cream over the jam, followed by a layer of whipped cream.
  • Repeat with the second layer of cake, jam, pastry cream, and whipped cream.
  • Place the third layer of cake on top, pressing gently.
  1. Cover with Marzipan:
  • Knead the marzipan until smooth. Roll it out on a surface dusted with powdered sugar into a circle large enough to cover the cake and drape down the sides.
  • Carefully lift the marzipan and drape it over the cake. Smooth the marzipan around the cake, pressing gently to adhere.
  • Trim any excess marzipan from the bottom of the cake.
  1. Decorate the Prinsesstårta:
  • If desired, tint a small portion of marzipan with green food coloring and shape it into leaves.
  • Shape the remaining marzipan into a dome or use a round cookie cutter to create a round shape for the top of the cake.
